Roxio recently introduced Easy VHS to DVD for Mac owners who want to save their old VHS tapes on DVD (don't worry, a Windows PC version is available as well).  And by easy, they mean easy!  Install the software, hook up the USB-to-RCA/S-Video capture device from the VCR (or analog camera) to your Mac, and start saving all those memories and home movies (or awesome sports moments you recorded in the 1980s) to DVD. 

It can also go to your portable device (like the iPod, iPhone, or Sony PSP) or even embarrass your kids by putting their Power Rangers birthday parties online.  It also comes with Toast Basic.  Also, you can edit the footage with iMovie if you wish.
